Fresh caviar, unpasteurized, that brings out the distinctive pure and transparent flavours of Caviar Nacarii.
The most sophisticated palates will find a selection of roe with a notably larger size (3–3.5 mm in diameter).
Sturgeon: Siberian sturgeon (Acipenser baerii). It is obtained through 2 extractions per year in spring and autumn, following the natural cycles of the female sturgeon.
